What is a balance bowl? It is a bowl jammed packed with micro and macronutrients. It has a perfect mix of carbs, protein and fat and all of the ingredients are from the earth. It can be vegan, paleo, local, seasonal or let's just say it is Magically full of Whole Foods. Whatever you call it, I think you will love it!
enough for 2+ bowls
Protein of choice (make it a clean source and organic if possible)
-Butternut squash (about 2 ½ cups cubed)
-1-2 sweet potato (peeled and cubed)
-Veggies of choice (we used carrots, turnips and broccoli)
-5-6 cups of romaine, spinach or mixed greens
- 1/2-1 avocado, chopped
-¼ cup tahin
-Juice from half a squeezed lemon
-2 tbsp of apple cider vinegar
-3 tablespoons water
-pepper& garlic powder to taste
Preheat oven to 425 degrees.
-Grease roasting trays or pans with 1-2 tsp of coconut oil
-Place cubed butternut squash and sweet potatoes on a baking sheet.
-Place carrots and turnips on another tray. I cut mine into thick sticks and I do not peel mine, but you can. (I toss on the broccoli for the last 15 minutes of roasting time)
-Roast in the oven for 30-35 minutes (sweet potatoes and squash), 20-25 minute (turnips and carrots). Turning around half way through.
-Prepare your protein of choice: chicken, tofu, chickpeas, I used black beans. Set protein aside.
-Let the veggies cool
-Assemble your bowl! Be creative as you layer the vegetables on top of the greens.
-Add the dressing and avocado to finish off the dish! Enjoy!
-In a small bowl combine tahini, lemon juice, apple cider vinegar, water, pepper & garlic powder.
Toss a couple of tablespoons of dressing over the greens in a salad bowl.
