I love making tacos because there are so versatile and delicious. The whole family can enjoy (picky kids included) by making their own tacos to their own personal taste. Plus they are colourful and healthy too.
What you need:
Step 1: Heat the oven to 400°F. Line a large baking sheet with parchment (I use parchment paper instead of cooking with oil).
Step 2: Cut your cauliflower into small-medium size pieces and place into a large bowl.
Step 3: Add in the chilli, paprika, cumin, garlic powder and the oil (optional) and coat the cauliflower well with the spices.
Step 4: Place the cauliflower onto the parchement paper and cook for 10 min, remove from the oven, turn the cauliflower and cook for another 10min.
For the Red Cabbage Slaw :
Step 1: Shred your red cabbage into thin strips and place into a large bowl.
Step 2: Grate your carrot and add it into your bowl.
Step 3: Chop your cilantro and add it to the bowl,
Step 4: Squeeze your lemon juice into the bowl and stir in the vinegar and salt.
Step 5: Stir well and top your tacos!
Ensemble your Tacos!
I usually make guacamole too, I put out sour cream (vegan brand) with some lemon squeezed in it and salsa Fresca on the side too.
