I am seriously addicted and obsessed with Vegan kale caesar salads and lets face it that is a pretty good/nerdy thing to be addicted to (don't worry I am not as boring as I seem). The Problem is the amount of money I spend buying these gralicky masterpieces in restaurants every week! Well, that is why I have started to make my own at home versions and if you know me, the recipe is going be user friendly and easy because as you know...I don't love to cook, but I LOVE to eat. Here is my twist on a vegan caesar salad xo
-2-3 bunches of Kale (I also mixed in some red lettuce I had left over. You could also use romaine or a mixture of kale and romaine.
-2 slices of sprouted grain bread
-1/3 cup of walnuts
-1 Tbsp of coconut oil
-1/2 a fresh lemon
-1/3 cup of daiya shredded cheese or parmesan (for those who are not dairy free) *optional
Ingredients for dressing:
-1/4 cup of tahini or hummus
-1 Tbsp of mustard or honey mustard
-Juice from 1/2 a fresh lemon
-3 Tbsp fresh chopped garlic (4 cloves)
-1 Tbsp of maple syrup
-salt + pepper to taste
01-3 Tbsp of water
-Strip kale leaves from the stems (discard stems). Wash and dry the leaves and place them aside in a bowl.
-Take sprouted grain bread and spread with 1 tsp of coconut oil or earth balance (vegan butter substitute) and cut into crouton sized cubes
-In a large frying pan grill the croutons with 1 Tbsp of chopped garlic or garlic salt over medium heat until toasted (place aside in a bowl).
-Add coconut oil to the large frying pan and toast chopped walnuts. Cook over medium-low heat, stirring constantly, until lightly browned, takes about 2 to 4 minutes.
-Now its time to massage the kale! I like to squeeze in the juice of 1/2 a fresh lemon and then message until the kale shrinks a little.
-Once the kale is massaged and the croutons and nuts are cool, you can add all the ingredients to the kale.
-Pour on you're dressing (directions below) and toss your salad.
-Delish and seriously addictive!
Directions for dressing:
- Blend the ingredients in a high speed blender or magic bullet.
-Add water until you find your desired consistency.
-You could whisk together in a bowl with a little muscle if a blender is not available.
